WHO WANTS…
{Cupcakes and Cocktails}
I made some delicious Vanilla Cupcakes with a Creamy Chocolate Frosting…
and to end it… a Whipped Chocolate Shake Cocktail!
Here is the tutorial…
Ingredients for batter:
{Makes about 20}
1 1/2 sticks unsalted butter, room temperature
1 1/4 cups granulated sugar
3 eggs
1 teaspoons vanilla extract
1 teaspoons almond extract
1/2 cups all-purpose flour
1/2 teaspoon baking powered
1/4 teaspoon baking soda
1/4 teaspoon kosher salt
1/2 cup buttermilk
Ingredients for a Creamy Frosting:
DIRECTIONS:
Preheat the oven to 325ºF.
1. Beat the butter and sugar.
2. Sift together the flour, salt, baking powder and baking soda into a small bowl.
3. Butter Mixture needs to be light and fluffy.
4.Then add the eggs, mixing well after each addition
5. Add vanilla and almond extracts.
6. With the mixer on low speed, add the flour mixture to the butter mixture, alternating with the buttermilk and ending with the flour.
7. Fill each cup 3/4 full with batter. (I made used Mini Cupcake Pan and a Regular- Your Choice)
Bake for about 20 to 25 minutes (Regular Cupcake Pan), or until the center of the cupcakes spring back when touched.
Cool completely before frosting.
To Make Frosting:
8. In a medium bowl, sift together the confectioners’ sugar and cocoa, and set aside.
9.In a large bowl, cream butter until smooth, then gradually beat in sugar mixture alternately with milk. Blend in vanilla. Beat until light and fluffy. If necessary, adjust consistency with more milk or sugar.
10. You can use a pipping to decorate!!
Served BEST FRESH and/or Store for two days.
