{Cupcakes and Cocktails} #Tutorials 2

The other day I made some DELICIOUS 
Lemon Meringue Cupcakes and we enjoy them with a
 Sweet Infused Cocktail!



If you want to try them out.. Here is the Tutorial! Enjoy..

Makes about 12 Cupcakes
– 1 1/2 Cups all-purposed flour
– 2 teaspoons baking powder
-1 teaspoon salt
– 2 tablespoons grated lemon rind of 1 1/2 Lemons
-1 stick of butter (softened)
– 1 cup of sugar
-2 eggs
-2 tablespoons of lemon juice

Instructions
 

1. {Preheat Oven to 350 F} Cream butter and sugar until light and fluffy (3)
2. Mix flour, baking poweder, salt, and lemon rind together and set aside.
3. Butter must be light and fluffy as shown.
4. Add eggs one at a time, beating after each addition. 

5. Add lemon juice and mix until well blended.
6. Add flour mixture
7. blend until the batter is smooth. 
8. Add to cupcake papers and bake for 15 or until golden on top. Remove and coll for 10 minutes

To make Meringue Topping

3 Egg Whites
Pinch of Salt
1/4 Cup of Sugar
A few teaspoons of sugar for dusting

1. Beat egg whites with a pinch of salt until they start to stiffen.
2. Gradually add sugar, beating until stiff but not dry. 
3. Place meringue on each cooked cupcake forming peaks. Dust lightly with sugar
Cook cupcakes in the over for another 5- 7 minutes or until meringue is just golden brown. Let cool.

Best served fresh or stored for up to 2 days.

To Make Sweet Infused Martini I Used:
2 oz of X Rated Fusion Liqueur 
2 oz of Chambord Flavored Vodka (Pink Edition)
1 oz of Cranberry Juice

On SHAKER full of ICE add X Rated Vodka, Chambord Vodka, and cranberry.
Shake and Serve!

I’m not an alcoholic, I just LOVE to drink socially and mix up different juices and vodkas!
