Merry Christmas Eve! I just love the food around the holidays, and it only makes me terribly miss my mom’s cooking during this time of year. So I always love adapting her recipes, I call her often for her recipes of my favorite dishes and make my own during Christmas & New Year’s.
When I was living with my mom, she would always make us Tamales for Christmas Eve, Bunuelos, Pozole and Ponche for Christmas Day. This year, i’m making all my favorite mom’s dishes for our Christmas Eve dinner.
In the spirit of the holidays, posadas and Cocoa Pebbles. We decided to add a little Cocoa Pebbles to our delicious bunuelos inspired by Cocoa Pebbles’ Hot Chocolate Cocoa Pebbles Cookies recipe.

Cocoa Pebbles Bunuelos Recipe:
Ingredients:
2 Cups of Flour
1/3 Cup of Sugar
1 Egg
1 tsp of baking powder
1/2 tsp of cinnamon
pinch of salt
1/3 cup of Post Cocoa Pebbles, grounded
(Cinnamon & Sugar Mixture for dusting)
In a large bowl, combine all dry ingredients (Flour, Sugar, Baking Powder, Cinamon, & Salt). Set Aside.
In a medium sauce pan, bring to boil, water, sugar, vanilla and butter until melted.
Pour the milk mixture onto the dry ingredients. Mix by hand or spoon. Then transfer to a lightly floured surface and knead for about 10 minutes.
Make 1 inch balls. Roll the balls into a very thin tortilla. Let them dry on a flat surface for at least an 1hr.
Heat a skillet with oil. Fry each bunuelo until golden brown on both side.
Quickly transfer to a cooling rack and sprinkle cinnamon/sugar mixture on both side of the bunuelo.
Serve with some hot cocoa or milk.
