About Nature Box: Each month, your box will include 15 to 20 servings across 4 to 6 different Nature Box snacks. You can trust that their products will be made from the most wholesome ingredients and will be minimally processed, if at all. 

We tried all the snacks and it was surprisingly very YUMMY. This month’s Nature Box came with Sun-Ripped Peaches, Harvest Fruit Granola Mix, Citrus Kick Almonds, Apple Rings & Organic Mighty Mix. I didn’t like the apple rings but Victor did loved them. All the snacks are gone by now and I’m very please by the taste & size of the products. My favorite was the HARVEST FRUIT GRANOLA MIX. So I decided to bake a cupcake with it and the result was EXTRAORDINARY! The cupcake is a little dense but we loved it, even my little girl loved them.. so I believe is Kid APPROVED! Its’ egg free & about 130 Calories. Below is the quick recipe.

Nature Box: Chocolate Fruit Granola Cupcake
Prep time: 20 mins
Cook time: 18 mins
Total time: 38 mins
Serves: 12
Ingredients
  • 1 cup of Non-Fat milk (Dairy or Non-Dairy)
  • 1 teaspoon of vinegar (Apple Cider Vinger Optional)
  • 1 cup of whole wheat flower
  • 1/4 or 1/3 cup of unsweetened cocoa powder
  • 3/4 cup of light brown sugar
  • 1/2 cup of unsweetened apple sauce
  • 2/3 cup of Nature Box’s Harvest Fruit Granola Mix
  • 1/4 tsp of salt
  • 3/4 tsp baking soda
  • 1/2 tsp of baking powder
  • 1 tsp of vanilla extract
  • Baking Cups & Cupcake Mold
Instructions
  1. Preheat Oven at 350 Degrees F
  2. In a small bowl combine milk and vinegar. Mix well and set aside.
  3. In a medium bowl, whisk flour, cocoa, baking soda, baking powder, salt and set aside.
  4. In a large bowl, combine applesauce, brown sugar, & vanilla. Pour in the milk mixture and mix well. Then add Nature Box Fruit Granola Mix and combine well.
  5. Stir in the dry ingredients and mix until just combined.
  6. Divide into evenly on cupcake pan. Cupcakes wont rise as much so fill in about 3/4’s full.
  7. Bake for 18 minutes or until toothpick comes out clean. Let cool for 10minutes on the cupcake pan and then remove into wire wrack to completely cool.
  8. Once cooled, add your favorite FAT FREE or LIGHT Cool Whip or your favorite low calorie frosting.
  9. Each {unfrosted} cupcake is around 130 Calories.
