Healthy Ice Cream Sandwiches

We are a big fan of Ice Cream Sandwiches but they are not all healthy or gluten-free. Remember our no-bake energy pops? Well these Ice Cream sandwiches are  made with a healthy and yummy no-bake cookie filled with nuts, peanut butter, a little nutella, honey, flaxseed & oats.

My daughter and husband loved these ice cream sandwiches..and I did too, of course.

To make the following ice cream sandwiches you must need our “No-Bake Energy Pops” recipe. I’m sharing this recipe over at Nature Box

Healthy Ice Cream Sandwiches

  1. Instead of forming balls to make the “no-bake pops” press them into a cookie sheet and cut out circles with a circle cookie cutter.
  2. Freeze them until firm.
  3. add a scoop of ice cream onto two cookies and freeze until ready to serve.

    If you wanted to make them a little lighter, there is a weight watcher recipe where you use graham crackers and cool whip to make ice cream sandwiches. You could use the cool whip here also!ReplyCancel
